Zoodle Shrimp Scampi! Woot Zoot!


Ok as a reformed pasta addict I can honestly say this is super delicious.  Now I’m not saying that zoodles replace pasta.  They just don’t.  But they do soak up this amazing sauce and pair nicely with the shrimp.  I’m not sure if you can call it totally clean eats if you use wine. Can you? However I replace the oil and butter with chicken stock.  I used gads of garlic because I always do.  I didn’t have any parsley but I did have some left over grape tomatoes that were startin to shrivel so I sliced those babies up and threw them in there.  Seriously people this was so good.  And…………so easy.  Check out the video and the recipe below!

Shrimp Scampi Zoodles

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 2-3 servings

Shrimp Scampi Zoodles


  • 1 lb raw shrimp (I use tail on)
  • 3-4 zucchini
  • 4 cloves of garlic
  • 1/2 yellow onion
  • 1 cup grape tomatoes
  • 1/2 cup chicken stock
  • 1/2 cup white wine
  • Salt, pepper, red pepper flakes
  • Cooking spray
  • 2 tsp oil


  1. Preheat oven to 400 degrees
  2. Spiralize your zucchini with spiralizer of choice
  3. Chop onion
  4. Mince garlic
  5. Slice grape tomatoes in half
  6. Spray shrimp with cooking spray or toss in small amount of oil
  7. Season with salt, pepper and red pepper flakes
  8. Heat a pan to medium heat with 1 tsp EVOO
  9. Add garlic, onions and tomatoes.
  10. Cook until onions are translucent
  11. Roast shrimp at 400 until pink about 7 minutes
  12. When onions are translucent add white wine and chicken stock and reduce until slightly thickened
  13. Add noodles and cooked shrimp and heat through
  14. ENJOY

Fix Approved Quick Weeknight Meal! Fish Tostadas!


So do you want to mix it up for Taco Tuesday? Need a quick foolproof clean eat?  Well I came up with these tostadas that are delish and can be made super fast with minimal mess!  These are so simple they barely require a recipe and measuring!  The hubs is a huge fan of the standard taco and would not be disappointed to find the yellow or blue box versions for dinner.  But alas, he is not the cook I am!  HAHA! He does however approve of these yummy tostadas! And they just so happen to be fix approved and super duper easy! Check out my little video above and my recipe below! Have an awesome day!

Fix Approved Fish Tostadas

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Fix Approved Fish Tostadas

When following the 21 day fix, measure out your fish in your red container. Measure out your avocado in your blue container. 2 small corn tortillas count as a yellow container. Corn also counts as a yellow container so you can measure that out for each pouch and count it accordingly. Broccoli slaw is a green!


  • Corn Tortillas (as many as you want to eat!)
  • Cooking Spray (coconut or EVOO is best)
  • Fish Filets Almost any type of fish will work I use Mahi Mahi (I used two 4oz filets for two people)
  • Chili Powder
  • 1/2 cup frozen corn (I like fire roasted )
  • Jar of Chunky Salsa
  • 1/2 Plain Greek Yogurt
  • 2 limes
  • Salt and Pepper
  • Broccoli Slaw for topping
  • Avocado
  • Parchment Paper


  1. Preheat oven to 400 degrees.
  2. Place corn tortillas on baking sheet and sprinkle with chili powder and spray lightly with cooking spray. Bake until crisp (check after about 5 minutes)
  3. Place a piece of parchment paper on another baking sheet.
  4. Place one filet on the paper. Season with salt, pepper and chili powder.
  5. Add approx 2-4 tablespoons of salsa and about the same of frozen corn.
  6. Squeeze about half a lime of juice on top.
  7. Fold up the sides of the parchment paper to form a sealed pouch.
  8. Repeat all instructions for the next filets.
  9. Bake fish pouches at 400 for approximately 15 minutes or until flaky and cooked through.
  10. While fish is cooking create the sauce. Combine 1/2 cup of greek yogurt with approxmately 3 tablespoons of salsa and the juice of half of a lime. Add a few sprinkles of chili powder, salt and pepper. You can adjust all the ingredients to taste.
  11. Mash up avocado.
  12. When tortillas are crisp spread 1/4 of an avocado on each tortilla.
  13. When fish is cooked through spoon fish and sauce on top of avocado.
  14. Top with broccoli slaw and sauce!
  15. Enjoy!

So I am channeling summer on this horrible dreary and SNOWY APRIL day in New Jersey! Seriously Spring is being so rude this week! We are over the cold here in NJ and we are ready to go outside and get some Vitamin D! Ok well since I can’t have tropical weather right now I went for a tropical drink to try and change my mood! Think Pina Colada but way healthier!!! This was AHHHHMAZING! It was originally a beach body recipe but I of course had to make it my own!! I can’t leave anything alone!

Coconut Lime Shake

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 1 serving

Coconut Lime Shake

You could definitely play around with the amounts of the liquids to bring the calorie count down. You could do 2 ounces of juice and 2 of water if you prefer. The more banana and ice you add the thicker it will get but you can add additional of these items as well! I counted it as 1 yellow, 1 red


  • Vanilla Shakeology
  • 4 ounces of Pineapple juice or Orange Juice (no added sugar)
  • 4 ounces of unsweetened almond or coconut milk
  • 2 Tbs of lime juice
  • 1 tsp of lime zest
  • 1 tsp of coconut extract
  • 1/4 cup frozen banana
  • 1/4 cup Ice


  1. Add to a blender and enjoy!

Ok so I saw a similar recipe to this and of course had to make my own version and most any version of mine contains PB because why the hell not!? IT IS THE BEST THING EVER CREATED! I really could eat peanut butter all day every day for the rest of my life.  I am finally getting over my yearly withdrawal from Reese PB Eggs. Ugh even writing is making me swoon.  Ok I digress…….Go make this now!

I posted this on Facebook and then instantly came up with some other variations……..

Swap your 8 ounces of Almond Milk for 4 ounces of Coffee!!!!!!!!!!!!!!!

If you want to keep the calorie count down you could swap your natural PB for some PB2 (second best thing ever created)



  • 1 scoop chocolate shakeology
  • 8 ounces of Almond Milk
  • 2 tsp natural PB
  • 1/2 tsp all natural vanilla extract
  • 1 graham cracker square (I go old school with the red box)
  • A few dashes of cinnamon
  • 1/4 Cup of frozen banana slices
  • 1/4 Cup of Ice


  1. Comine in a blender
  2. Blend
  3. Enjoy
  4. Report back and tell me how much you freakin loved it!!!!

Bananas Im pretty sure every store on the planet carries bananas, but TJ’s are always good, they have organic and I’m there anyway.  As soon as they are ripe, I slice them up and freeze them for my daily Shakeology!

Coconut Oil Spray-  Have you read about Coconut Oil and its amazing benefits! Check it out!

Organic Virgin Coconut Oil (not pictured)

So I bought this enormous jug from Costco and I’m pretty sure it will last me until 2029 but Trader Joes brand is great and a good price. I have replaced most of the oil I use in baking and cooking with coconut oil. Love it!

Salsa Authentica

 Simple ingredients, no added sugar perfect amount of heat.  An awesome condiment for snacks! I love their salsa! Check out their Salsa Verde too! Great for Chicken Chili!

Honey and Pure Maple Syrup

I use honey in place of sugar in a lot of my baking now. Technically raw honey is fix approved but with small kids I don’t use it. Maple syrup is also a great replacement for sugar in most baking. And it sure is delish!

Raw Almonds

 The perfect grab and go snack and if you are feeling wild and crazy you can make your own almond butter or chocolate almond spread!!

Organic Broccoli Florets

These are just a great go to in my fridge.  I can throw together some stir fry in minutes with already prepped broccoli and some chicken!

Chicken Stir Fry

Organic Broccoli Slaw:  Ok this stuff is just plain fabulous!!! So many ways to use it oh my! Throw it in salads for some extra crunch! I use it in my Buffalo Chicken Rice Bowls to get some veggies in!

Buffalo Chicken Rice Bowls

Cooked shredded chicken (rotisserie or baked)

½ cup plain greek yogurt (regular yogurt will work but will be soupier)

Franks Hot Sauce to taste

Trader Joes Organic Broccoli Slaw

Trader Joes Organic Frozen Brown Rice

Shredded Cheese of Choice

Combine yogurt and franks hot sauce in a sauce pan and heat over medium low heat until hot, don’t boil.  Add shredded chicken to heat it,

Microwave your frozen rice!

Rinse your broccoli slaw!

Assemble your bowl: Brown Rice, broccoli slaw, buffalo chicken, shredded cheese! MMMMMM

The chicken also works great as a flat bread, over a green salad or as a wrap!!!


Spaghetti Squash

So I’m obsessed with spaghetti squash! Obsessed. See I am a recovering carb addict.  Like my last meal would be a bagel with butter and then some pasta with vodka sauce.  I heart carbs.  But I am very proud of the progress I have made towards staying away from refined carbs. Me My yellow container and I have a special relationship.  Ok so anyway back to the spaghetti squash.  I am not a fan of whole wheat pasta.  It just doesn’t do it for me.  And while I like a zoodle, it doesn’t fulfill that pasta craving.  But my friend spaghetti squash fills this void.  It has great texture and absorbs the flavor of whatever you put it in!!!!!

And here is the best tip I have learned. EVER!!

When preparing your spaghetti squash…..poke some holes in it with a knife or a fork.  Pop that bad boy in the microwave for about 5 minutes to soften it slightly.  Then boom! You won’t cut your fingers off when you go to slice it in half.

Almond Butter

So Autumn is pretty stingy with her teaspoons but adding them to your Shakeology or  on a multi grain slice of toast  is divine! Maybe even throw on some dark chocolate chips for a special treat! MMMMMMM

Organic Popping Corn

Pop corn is such a great snack! Don’t buy that stuff in the toxic microwave bag!! Just make your own!! Way healthier in so many ways! All you need is a pot with a lid and a tiny bit of oil! You can flavor it in so many different ways!

Toss it in your vanilla protein shake to make it chocolate!

Throw it in your coffee instead of sugar!

Vanilla Extract

I love the flavor or TJ’s extract. It does not have the alcohol flavor of many extracts.  I like to put it in my coffee to add some sweetness without added sugar!

Pumpkin Pie Spice

Do you heart a pumpkin spice latte? Well guess what?! I have a healthy solution for y’all!!!!!

Pumpkin Pie Latte Shakeology!! You are welcome!!!

1 Scoop of Vanilla or Caffe Latte Shakeology

4 ounces of Almond Milk

4-6 ounces of coffee

1/8 cup of pumpkin puree

2 tsp almond butter

1/8-1/4 cup frozen banana

A few shakes of Trader Joe’s Pumpkin Pie Spice

Organic Brown Rice Pasta

So I am a Pasta addict.  I love pasta. I could eat pasta everyday of my life.  But A. its not good for me and B. it is not fix approved.

I am definitely not a fan of whole wheat pasta.  The texture is just way off. Ick.  I think Brown Rice Pasta is more tolerable.  Although I think I would still pick Spaghetti Squash as my current favorite pasta remix.

Whole Wheat Couscous

Couscous is such a fast and versatile side dish! And whole wheat couscous is so much healthier! Cook with chicken stock instead of water, throw in some spinach, even some pine nuts or slivered almonds! It takes 5 minutes! Great with shrimp, scallops or fish!

 Dark Chocolate Wedges

So if you frequent Trader Joes you have no doubt passed these babies in the check out line.  They are the perfect chocolate fix! A small little square of awesome dark chocolate! And how cute is the little tin!?

Slow Cooker Chicken Cacciatore




Slow Cooker Chicken Cacciatore

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Yield: Approximately 6 servings

This recipe was adapted from You can find the original recipe here: A delicious and flavorful meal that takes minutes to prep! So easy and so yummy! Fix Approved!


  • 6 Red Containers of boneless skinless chicken breasts (about 4 chicken breasts)
  • 1 Green Container or 1 yellow onion, diced
  • 1 Green Container o r 1 red bell pepper, seeded, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher or sea salt
  • 3.5 Green Containers or 2 (14.5 ounce) cans fire roasted tomatoes
  • 1/4 cup balsamic vinegar
  • 1/4 cup freshly chopped basil
  • 1 teaspoon ground oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup freshly grated parmesan cheese (optional)


  1. Pour 1/2 a green container of the diced tomatoes in the bottom of your slow cooker.
  2. Add the remaining ingredients in this order: chicken breasts, onion, bell pepper, garlic, black pepper, salt, red pepper flakes, oregano remaining diced tomatoes, balsamic vinegar and basil.
  3. Cover and cook on high 4-5 hours or low 6-7 hours.
  4. I like to shred the chicken up in the sauce.
  5. Serve chicken over whole wheat pasta, spaghetti squash or noodles!! (Add appropriate color container)
  6. Sprinkle parmesan cheese on top of chicken before serving.( Add your blue container)


For 21 Day Fix. 1 Red Container, 1 Green Container
