Zoodle Shrimp Scampi! Woot Zoot!

Ok as a reformed pasta addict I can honestly say this is super delicious.  Now I’m not saying that zoodles replace pasta.  They just don’t.  But they do soak up this amazing sauce and pair nicely with the shrimp.  I’m not sure if you can call it totally clean eats if you use wine. Can you? However I replace the oil and butter with chicken stock.  I used gads of garlic because I always do.  I didn’t have any parsley but I did have some left over grape tomatoes that were startin to shrivel so I sliced those babies up and threw them in there.  Seriously people this was so good.  And…………so easy.  Check out the video and the recipe below!

Shrimp Scampi Zoodles

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 2-3 servings

Shrimp Scampi Zoodles

Ingredients

  • 1 lb raw shrimp (I use tail on)
  • 3-4 zucchini
  • 4 cloves of garlic
  • 1/2 yellow onion
  • 1 cup grape tomatoes
  • 1/2 cup chicken stock
  • 1/2 cup white wine
  • Salt, pepper, red pepper flakes
  • Cooking spray
  • 2 tsp oil

Instructions

  1. Preheat oven to 400 degrees
  2. Spiralize your zucchini with spiralizer of choice
  3. Chop onion
  4. Mince garlic
  5. Slice grape tomatoes in half
  6. Spray shrimp with cooking spray or toss in small amount of oil
  7. Season with salt, pepper and red pepper flakes
  8. Heat a pan to medium heat with 1 tsp EVOO
  9. Add garlic, onions and tomatoes.
  10. Cook until onions are translucent
  11. Roast shrimp at 400 until pink about 7 minutes
  12. When onions are translucent add white wine and chicken stock and reduce until slightly thickened
  13. Add noodles and cooked shrimp and heat through
  14. ENJOY
